Shit, you named two heavy hitters there IMO. Gonna have to break this doen into catagories to say which is the best, because hell, how can you compare a game like MK to something like...Super Mario? but umm...If I had to say some shit off the dome with the games I played so far, I'd go for:

Fighting: hmm....damn, I'm stuck between MK Trillogy or KI1
Sports: Gran Turismo 3
Action: God Of War
RPG: FF7
Adventure/Puzzle: Could argue Resident Evil 2 in this catagory
Horror: Resident Evil 2
Stealth: Gotta go with pandoras box
