REM sleep (Rapid Eye Movement) is the process we go through when we sleep, I believe my high school health teacher told us there are 10 steps of REM sleep and in order to have what is considered a "proper" night's rest, you must enter and leave all 10 steps in the sleeping process...
when you dream and remember it, this is how you know you have gone through all 10 steps of REM
