Name one person that knows every movement of every style, or even three different styles.

I doubt you could predict the movements of a master of any style. Any true master of any style can read and predict the movements of his opponent. Whether that opponent is some street drunk, a boxer, or a student of a different style. Depending on the style, martial arts masters are also excellent at masking their intentions, and striking quickly. Do you really think a specialist in combat doesnt know that movements can be anticipated and then countered? That is one of the main faucets of ANY martial art. That is what gives any decently skilled martial artist an advantage over an untrained opponent.

I doubt anyone who has spent their life training in martial arts would get thrown into a position where their knowledge is useless that easily. And do you think such an expert would just automatically be helpless when one of the thousands of techniques he knows doesnt suit the situation? He has been fighting all his life... Do you think people like that cant adapt to situations like someone who WASNT trained in martial arts? Martial artists are still people with instincts, common sense, and as much natural ability as the next guy. I dont understand how you could see training in a style of martial arts and learning effective ways to disable your opponent as a disadvantage.
