Evolution is simply change over time. What needs to be recorded? There is proof, you fucking idiot. The fact you're suggesting that there isn't clearly indicates that you don't know jack shit about it. There IS proof. There IS evidence. There's a reason why evolution is being accepted as a fact in the science community, and it's not because scientists are a bunch of ignorant dumbfucks who believe something with no facts or data to back it up (which obviously can't be said about you). Look at viruses if you want to see proof of evolution. It's right there.
