If a major label gives you money, they're paying you. If you're signing to them for an amount of money, they're buying your musical rights. If they buy your musical rights off you, that means you've sold your musical rights to them. That's where the "sell" prefix originates. "Out" refers to the change in your image demanded by the label, which is a result of you signing to them.
